Recipe: Old-Fashioned Beef Stew

Created: 2006-01-24 Tuesday

Ingredients

Combine flour, salt, and pepper on waxed paper. Roll beef in mixture, shake off excess.
Melt shortening in a heavy-bottomed pot. When fat starts to smoke, carefully add beef, only five or six pieces at a time. Brown all sides, then remove. After the last batch, return meat to pot; stand back, and slowly pour in boiling water.
Stir; add lemon juice, Worcestershire sauce, sugar, sliced onion, bay leaves, and allspice.
Lower heat; cover; simmer for 1-1/2 to 2 hours, until meat is tender.
Add carrots, white onions, and potatoes, cook for 20 to 25 minutes, until easily pierced with a fork. Ladle stew into large bowls and serve.
